4 Easy Delicious and Creative Chicken Recipes

 Creole Chicken and Okra

 8 Chicken Pieces- Thighs and Drumsticks

1 Tablespoon Canola Oil

1 Cup Coarsely Chopped Green Pepper

½ Cup Sliced Celery

1 Clove Garlic Minced

2/3 pound Okra, Sliced

2 Cups Coarsely Chopped Tomatoes

¼ Cup Chopped Fresh Parsley

½ Teaspoon Paprika

1 Bay Leaf

½ Teaspoon Salt

½ Cup Warm Chicken Broth

¼ Cup White Wine

¼ Teaspoon Hot Pepper Sauce

Remove and Discard Chicken Skin.  In a nonstick Dutch oven, place oil and heat over medium temperature.  Add chicken and cook turning about 10 minutes or until brown on all sides.  Remove chicken to warm bowl.  To Dutch oven, add onion, green  pepper, celery and garlic; stir and cook about 5 minutes.  Add okra and cook, stirring about 5 minutes more.  Stir in tomatoes, parsley, paprika, bay leaf and salt.  Return chicken to Dutch oven and spoon vegetable mixture over the top.  In a small bowl, mix together the chicken broth, wine and hot pepper sauce; pour over all.  Cover, reduce heat to low and cook about 30 minutes or until fork can be inserted in chicken with ease.  Serve with rice, if desired.  Makes 4 servings. 

 2.  Grilled Caribbean Chicken Breasts

 4 Boneless Skinless Chicken Breast Halves

¼ Cup Orange Juice

1 Teaspoon Grated Orange Peel

1 Tablespoon Olive Oil

1 Tablespoon Lime Juice

1 Teaspoon Grated Ginger Root

1 Clove Garlic Minced

¼ Teaspoon Hot Pepper Sauce

½ Teaspoon Oregano

½ Teaspoon Salt

¼ Teaspoon Pepper

 In a large shallow bowl, mix together orange juice, orange peel, olive oil, lime juice, ginger, garlic, hot pepper sauce and oregano.  Add chicken, turning to coat.  Cover and marinate in the refrigerator about three hours or overnight.  Sprinkle chicken with salt and pepper and place on a prepared grill about 6 inches from the heat.  Grill turning about 40 minutes or until meat is cooked through. 

3.  Sautéed Chicken With Pears

2 pounds Chicken Tenders

4 Tablespoons Low Sodium Soy Sauce

 2 Teaspoons Grated Orange Peel

4 Bartlett Pears, peeled, Cored, each sliced in 8 pieces lengthwise

½ Cup Sliced Celery

3 Spring Onions Sliced

½ pound Sugar Snap Peas, Ends Snapped

½ Cup Orange Juice

¼ Cup Low Sodium Chicken Broth, Warm

½ Teaspoon Salt

¼ Teaspoon Pepper

Sprinkle chicken with soy sauce and 1 teaspoon of the orange peel, let it sit 5 minutes.  Spray a large frypan with cooking spray and heat over medium high temperature.  Add chicken and sauté, turning about 2 minutes.  Sprinkle pears with 1 teaspoon orange peel and add to pan, cook 2 minutes.  Add celery and onions, cook 2 minutes more.  Add sugar snap peas and sauté about 3 more minutes or until just tender.  Add orange juice, broth, salt and pepper cook 1 minute.  Serve with rice.

 4.  South of the Border Chicken Salad

4 ½ Cups Cooked, Diced Chicken

2 ¾ Cups Whole Kernel Corn

1 ½ Cups Canned Black Beans Drained

1 Cup Diced Red Peppers

1 Cup Diced Green Peppers

1 ½ Cups Thinly Sliced Scallions

2 Tablespoons Thinly Sliced, Seeded Jalapeno Pepper

2/3 Pine Nuts Toasted

½ Cup Keller’s BBQ Sauce

¾ Cup Italian Salad Dressing (Not Creamy)

2 Tablespoons Chili Powder

1 Tablespoon Cumin

1 ½ Tablespoons Lime Juice

1 ½ Tablespoons Chopped Cilantro

1 ½ Teaspoon Hot Pepper Sauce

 In a large bowl mix together chicken, corn, black beans, red and green peppers, scallions, jalapeno pepper and pine nuts.  Toss gently to mix well.  In another bowl, mix together BBQ sauce, Italian dressing, chili powder, cumin, lime juice, cilantro and hot pepper sauce.  Stir to mix well.  Pour dressing mixture over chicken mixture and toss to coat evenly.  Refrigerate covered 3 hours or overnight.  Serve in a large fried tortilla shell over a bed of shredded lettuce.  Garnish with dollops of sour cream, chopped black olives and shredded cheddar cheese if desired.
